Vitamin K2 | Where Modern Diets Fail

Nearly a century ago, Weston A. Price, DDS and his wife traveled the world in search of solutions to the dental decay and bone structure problems plaguing US children. What did they find? People eating traditional diets had greater amounts of vitamins and minerals as those eating a modern diet. Through all his research there remained one mysterious vitamin which he labeled "Activator X".

The Science-y Stuff

"Activator X" is now known as vitamin K2. At first, scientist believed that this vitamin served the same functions as vitamin K1 but no. This fat-soluble vitamin plays a very important role in the body. Osteocalcin and Matrix Gla are proteins that are put into action by K2 (1). It's like an alarm clock that sends these proteins to work.

Benefits of Vitamin K2

Stunts Liver Cancer Growth

In a study (2) of over 100 patients with malignant hepatoma, a randomly selected group was given 45mg of vitamin K2 per day along with their conventional therapy. At the two year mark, the vitamin K2 group had a 38% higher survival rate than the control. 

Decreases Artery Calcification

Remember those two proteins that vitamin K2 sets into action? Osteocalcin and Matrix Gla. These two $7 words play an important role in restoring calcium balance in the body. Calcium swimming through the blood stream can't get absorbed into the bone matrix without these proteins and ends up settling in the artery walls. Vitamin K2 activates the Matrix Gla protein. That protein latches onto the calcium in the arteries and gives it to Osteocalcin to be strengthen the bones.

Strengthens Bones

Calcium is essential to strong bones. We've known this for ages, but without it's buddies vitamin D3 and vitamin K2, calcium can't do it's job to rebuild bones. 

Prevents Dental Problems

Dental carries, or as we call them- cavities, are holes in the strong outer armor of our teeth. Weston A. Price, DDS discovered that diets high in vitamin K2, vitamin D3, and vitamin A prevent cavities. 

Steven Lin, DDS explains the link between diet and dental in greater depth in his book: The Dental Diet. I don't agree with his view of evolution but his explanation of vitamin K2 's role in dental health is very helpful.

Food Sources for Vitamin K2

Most Americans eat what is known as a SAD diet. It stands for standard american diet. The SAD diet is high in processed foods, sugar, and grains. It's also very low in nutrients. We already know that vitamin K2 is important, but what foods have it?

Plant Based Sources

Lacto-fermented vegetables and kombucha are the only non-meat sources of vitamin K2. This is because vitamin K1 is turned into K2 by bacteria. Probiotic foods such as sauerkraut and kimchi are filled with these K2 making bacteriums. 

Our favorite plant based K2 source is kombucha. Kombucha is a fermented drink with a slight tang and bubbly sensation.

Grass-Fed Meat & Dairy

Market animals fed a conventional grain based diet are virtually devoid of vitamin K2 (3). This is because these animals are designed to eat grasses and other pasture plants. The animals eat the plants, absorb the vitamin K1, and transform K1 into K2. Organ meats are nutritional powerhouses, but if liver is not your thing, opting for grass-fed beef is a great option.
