Clean Eating- BBQ Style
I LOVE BBQ. Being raised on delicious southern BBQ has really spoiled me. St. Lois style ribs, pulled pork, and smoked brisket all make my mouth water.Breaking out the charcoal grill in the middle of winter is not fun. You have to fight the cold, freezing wind, and frost bite. (You can't just leave it by its lonesome.) Bringing the barbecue indoors is the easiest way to get your fix when the weather isn't cooperating.
One of my favorite meats to BBQ indoors is chicken. A little bit of homemade barbecue rub can turn an ordinary chicken roast into a spice-tastic treat.
Whole Roasted BBQ Chicken

Barbecuing chicken is difficult. Cook it too long and you've made jerky. Cook it too fast and the delicious barbecue flavor will be lacking. The solution is slowly roasting the BBQ rubbed chicken in the oven.

BBQ Rub:- 1/2 Cup Organic Smoked Paprika
- 1 Tbs Black Pepper
- 1 Tbs Salt
- 1 Tbs Chili Powder
- 1 Tbs Garlic Powder
- 1 tsp Cayenne Pepper
Roasted Chicken:
- 1 Whole Chicken (5-7 pounds)
- 1 Small Onion, quartered
- 1 Tbs Olive Oil
Equipment:
- Measuring cups
- Measuring spoons
- Mixing bowl
- Fork/Whisk
- Large Cast Iron Skillet
- Sharp Knife
- Cutting Board
Instructions:
Preheat oven: 275 F
BBQ Rub
- Mix all rub ingredients in a mixing bowl.
- Rinse the chicken and pat dry.
- Trim the extra fat from the chicken.
- Rub the BBQ rub under the skin as much as possible.
- Rub more BBQ on the outside of the chicken.
- Place onion quarters into the cavity of the chicken.
- Grease the cast iron skillet with 1 Tbs of olive oil.
- Place the chicken in the cast iron skillet and bake for 3-4 hours or until the temperature reaches 165 F

ReplyYou are brave to roast the entire chicken. I "chicken" out and buy boneless chicken, but your recipe would work for that too!

ReplyI enjoy roasting whole chicken- the bones are all ready for chicken broth afterwards. Boneless cuts are nice, too.
